|Vinification||For this Piedmontese white wine a soft pressing of the grapes is carried out and a fermentation of the must at controlled temperature. At the end of the vinification process, the sparkling wine is bottled in order to refine its precious yeasts for 30 months. At the end of the refining time of the yeasts, the so-called “disgorging” is carried out in the wine, that is, a further 8/12 months of evolution (and maturation) before being put on the market for consumption.|
|Features||This type of Monferrato wines has a typical straw yellow color with subtle golden reflections and a fine and persistent perlage.|
On the nose, you can catch the fruity and fresh notes of peach and pear with white flesh in general; these fragrances come together and are combined with fragrances, more complex and elegant, which bring to mind the smell of freshly baked bread and the taste of freshly toasted dried fruit. The first sip of this Piedmontese wine is creamy and elegant with a long and persistent aftertaste in the mouth, full of fresh and citrus sapid sensations.
