For this typical Piedmontese red wine, of the Alessandro Motta farm, a strictly manual harvest is carried out in 20 kg perforated boxes. Then a soft destemming of the grapes is then carried out to allow “gently” to obtain all the juice present at the inside them. The next step to get this Piedmontese red wine is the alcoholic fermentation of the skins in steel tanks at a strictly controlled temperature for 10-15 days with frequent punching down and pumping over.
